How did pumpkins lose their popularity?





Just a few hundred years ago Native Americans highly valued the medicinal qualities of pumpkins.

Now the average American just carves them up and throws them away.
Even canned pumpkin pie filling is actually Dickinson squash!







A NEW APPRECIATION FOR THE NOBLE PUMPKIN







Today's health consciousness is bringing greater attention to the forgotten pumpkin.  Here are some great reasons to show the pumpkin some respect:





Weight Loss
 Pumpkins are high in fiber, but low in calories. Pumpkin seeds are high in protein. Both can help you feel more full and less hungry for longer periods of time.



Cancer
The beta carotene in pumpkin is an antioxidant which can help to prevent cancer better than supplements. The plant sterols in pumpkin seeds also help to prevent cancer.





Anti-Aging
The carotenoids in pumpkins help prevent wrinkles in your skin and give you healthier hair.



Immune Health
The Vitamin C in pumpkins help to strengthen the immune system to fight infections.

Smaller sugar pumpkins or pie pumpkins are more flavorful than large carving pumpkins.

Look for at least some green color in the stems.  Don't pick up pumpkins by their stems.  This could produce damage leading to rot.  Whatever coloration or pattern it has should be consistent across the entire pumpkin.  Pumpkins should be firm with no soft or wet spots.







Bake at 375 degrees until tender.  Then freeze it for up to 6 months.




Seeds can be washed, dried, and tossed with a little olive oil then baked at 160 degrees for no more than 15 minutes to protect the healthy fats.
